Thistle & Grouse, which opened on December 1, 2023, is now closing its doors with the hopes of selling the restaurant. The space underwent a full renovation, featuring a state-of-the-art kitchen, upscale decor, and elegant dining areas, including a mezzanine, a stunning bar, and an outdoor dining section. Previously, it was home to Rivalries Sports Bar, which closed in February 2023.
Thistle & Grouse is owned and operated by Chef Bobby Will and Kim Kraus, who previously ran Salt and Steel in Bar Harbor before relocating to Portland to launch this new venture. The concept behind Thistle & Grouse was to offer a fresh perspective on New England gastropub dining, with a focus on sourcing the finest local and seasonal ingredients. Their goal was to create innovative farm-to-table dishes and handcrafted cocktails, all within a relaxed and welcoming atmosphere.
We reached out to the owners for comment, and here’s what they had to say:
“We moved here with a dream of being a member of this wonderful community. We love Portland and its wonderful people. Unfortunately, we were unable to grow the business to a place that was sustainable despite great feedback from diners and very wonderful PR. Between opening in the dead of winter and the economy making it difficult for diners to afford to eat out as often this year, and being the new kid on the block, we found it difficult to maintain.”
